Cheese is a living breathing thing and as such requires constant care and monitoring. We take great pride in the maturing of our cheese ensuring that every piece that leaves our store is perfect. All cheese cut from the wheel is wrapped in specialty cheese paper, and you should, where possible, rewrap any leftovers in the same paper.
